    Nobody has the list.

    There is no authoritative record of what your building requires. It depends on your jurisdiction, and on whether you have a hood, a patio, a pool, an elevator, live music, or a grease interceptor.

    So operators find out about a permit when an inspector mentions it. Or when a renewal notice never arrives, because most counties do not send one.

    Determine what applies

    It prepares and submits the packet as your authorized agent, and schedules the human where a notary or inspection is required.

    Required for food facilities with commercial kitchens. Renews annually. The line above is the whole argument: it is checkable in an afternoon by anyone who doubts it.

    Restaurants

    Eight to fifteen permits per location — health, fire suppression, grease, alcohol, signage, assembly. Your GM should not have to hold all of it.

    Hotels

    Fifteen to twenty-five per property. Lodging licensure, transient occupancy tax, elevator, boiler, pool and CPO certification, and a liquor licence per point of service.
